I simply love pancakes for breakfast and especially those ones: only 3 ingredients, which means tasty pancakes in just under 1o minutes. These pancakes are perfect after exercising in the morning because they contain a high amount of protein due to the eggs and a great amount of fibre because of the oats. If you want to have a quick vegan version of these pancakes, substitute the eggs with 250ml plant-based milk and double the amount of oats. For 5 large pancakes you will need:
1 large banana, the browner and softer the better
2 eggs
1 handful of oats
pinch of ground cinnamon
First mush up the banana with a fork. Then crack in the eggs and add the oats, mix everything together until you have a smooth batter. Heat up a large pan to medium-heat with a teaspoon of coconut oil or any other oil you have on hand. With a ladle, pour the pancake batter in small portions into the pan and fry them on both sides until golden brown. My favourite way to eat these pancakes is with some fresh greek yoghurt, raspberries and a good amount of almond butter. Just top them with anything you like: crushed nuts, desiccated coconut, seasonal fruits etc.
