Thie time I had some apples at home that started to not look that nice anymore. So I did a quick apple sauce by simply peeling and cutting them, getting rid of the seeds and with a little water and orange juice boiling the apples until they got soft - only took around 10 minutes to do and the outcome is a beautiful, sweet and fresh apple sauce. The best type of apple to use for a homemade apple sauce is Granny Smith.
Apple sauce is a staple product in the vegan kitchen and works wonderfully as a substitute for eggs, likewise mushed up bananas, grounded flaxseeds and aquafaba work as substitutes, find a vegan recipe here where I used aquafaba. For these brownies I took this recipe as an inspiration and it worked out perfectly. Try it out - a healthy treat and very easy to make.
For 8 brownies you will need:
250g unsweetened apple sauce or apple mousse
120g almond butter, liquid
40-50g unsweetened cocoa powder
Preheat the oven to 175°C. Prepare a square-shaped baking tin by greasing it with a little bit of vegetable oil. If your almond butter is not a 100% liquid, warm it slightly up in the microwave. Then mix it together with the apple sauce until you get a homogenous consistency. Lastly, add the cocoa powder and fold it into the mixture with a spatula. If you want you can add some chopped up nuts, m&ms, chocolate chips, oreos etc. to this mixture - I left it as it was this time. Pour everything into the prepared baking tin and bake for 30-40 minutes until it is baked through, make a knife test to be sure. Take it out and let it cool down. I found the best way to eat the brownies was to leave them over night in the fridge and then eat them the next day. Their consistency will be incredibly gooey, very rich in flavour and amazingly chocolatey.
