A lot of people might think "Porridge?! Such a boring dish. Why is she writing a blogpost about it?" But it is everything but boring and so incredibly versatile. Having a porridge for breakfast is not something typical in Austria, so I remember the moment when I had my first porridge. I went on skiing holidays with my family and our hotel's breakfast buffet offered a wide range of different breakfast options, including a porridge. There it was served with cold sour cherries and cinnamon sugar. I had never tried this browny mush before but was intrigued to have something warm to eat before heading to the slopes. OH, HOW COMFORTING THAT WAS! The perfect combination of sweet, sour, warm and hearty flavours. Since then I have been experimenting a lot with different oats, milks, liquids, spices and toppings. Here I will tell you my favourite way how to prepare a porridge and give you some ideas how to give it a special twist and my favourite flavour-combinations.
For 1 portion of porridge you will need:
2 big hands full of porridge oats (instant oats work aswell, any kind of easy melting oats)
pinch of salt
honey, maple or date syrup
milk or any other milk alternative such as oat, almond, rice, soy milk....
Fill a small pan with the porridge oats and water, so the oats are covered with it. Add a pinch of salt and bring it to boil while stirring it continuously. When the porridge is boiling, bring it down to a small simmer and continue cooking it for the next 3-5 minutes, do not forget to keep stirring. Then add a big tbsp of honey and a generous splash of milk to make the porridge extra creamy. The porridge should be ready then and have a perfect moist, not too sticky consistency.
Now comes the fun part: the spices and toppings!
My favourite combination is adding 2 tsp of cocoa powder to the porridge and then top it with roasted desiccated coconut, freshly sliced bananas and a small tsp of peanut butter - YUM!
Another good combination is adding frozen berries to the warm porridge, or smushed bananas to make it extra sweet, caramelized nuts, cinnamon and apples, nutmeg and orange - there is such a great variety and you can be as creative as you like, just try it out and enjoy!
