I have been on the hunt for THE perfect cookie recipe for a long time. After visiting Levain Bakery in New York City and Creme in London I have been obsessed with cookies, especially the classic chocolate chip American cookie. Recently, after using and trying different recipes and methods, the English blogger Anna Newton posted a wonderful recipe of milk chocolate and hazelnut cookies that are just divine and exactly the cookie I was looking for. For 8 large cookies or 12 smaller ones you will need:
110g softened, unsalted butter
50g caster sugar
100g soft brown sugar
1 egg
1/2 tsp baking powder
1/2 tsp cornflour
180g plain flour
1/2 tsp of seasalt
2 large handfulls roasted peanuts
200g dark chocolate
First, cream the butter with both sugars together. Mix them for a good while until the whole mixture gets really fluffy and lighter in colour. Crack the egg in the mixture and combine everything well. Then add the baking powder, cornflour, salt and plain flour and mix it together, try not to overmix it, because you want the texture of the dough to be still soft and airy. Last but not least, chop up the peanuts and chocolate and fold them into the dough. Take a tablespoon and form golfball-size doughballs with your hands, place them on a plate and leave the plate in the freezer for at least 1 hour (the longer, the better).
Preheat the oven to 200°C and take the doughballs out of the freezer and place them on a baking tray with parchment paper - leave enough space in between them because they will spread in the oven. Bake them for 8 minutes, turn the tray and continue baking for another 3 minutes (if they are smaller, bake them for 6 minutes, turning the tray and baking them for another 2 minutes). The cookies are ready when the centre is still slightly soft but the edges golden brown and crispy. Take the cookies out of the oven, let them cool down for 20 minutes and enjoy the cookies lukewarm - my favourite way is having a glass of milk with them.
