
Apple and cinnamon, a combination that works just perfectly. I must admit, I have a real addiction to cinnamon. Dusted over coffee, in yoghurt, over plain ice cream, even in tomato sauce - cinnamon is my favourite flavour. The Austrian company Kotányi produce in my opinion the best cinnamon. Every time I visit my home in Austria I have to bring back at least one package of this wonderful spice, because I could not find any cinnamon in London yet that had a similar taste like Kotányi's.
After this ode to my favourite spice back to the recipe. More and more I am trying to adapt my usual recipes to vegan ones. It is a lot of fun to play around with substitute products - you can get creative and most of the times you have all these products at home, just try it out.
For 10-12 scones you will need:
For the scones:
190 plain flour
90g almond flour
60g caster sugar or coconut sugar
1 tsp baking powder
2 tsp ground cinnamon
pinch of salt
40g almond butter
30g soy or any plant based milk
90g peeled and chopped apples (around 1 apple)
30g chopped nuts (pecans, almonds, walnuts..)
For the glaze:
40g icing sugar
1 tbsp soy or an plant based milk
1 tsp ground cinnamon

Preheat the oven to 200°C. First combine the plain and almond flour, sugar, baking powder, ground cinnamon and salt together. Then add the almond butter, either with combine it with a spatula or with your hands until you get a crumbly texture. Lastly mix the chopped apples, nuts and milk into the dry ingredients until you get an even dough, add some more milk or flour if too liquid or too dry. Out of the batter form around 10-12 evenly sized balls, place them on a baking tray with parchment paper. Leave the scones in the oven for around 15-17 minutes, after 10 minutes check them, if they are getting too dark too quickly, turn down the heat slightly.

In the meantime you can prepare a glaze by combining the icing sugar, mild and cinnamon until you get a smooth texture. When the scones are ready, let them cool down and then drizzle the glaze on top, it will set quite quickly. The scones taste best either eaten by themselves or the classic way with some vegan butter or vegan clotted cream and jam.
