I simply adore cookies! They are so quick and easy to make and make a great small snack or a treat for friends and family. I had some homemade apple sauce leftover (find a quick recipe here) and thought why not just using it to make some cookies and substitute eggs and sugar? I worked out perfectly, there is no apple flavour at all in the cookies, it simply helps for the consistency and to give the cookies a natural sweetness. You can leave out the chocolate and add more nuts, or dried cranberries, maybe some peanut butter, orange zest, pretzels? Cookies are so versatile, so simply add any favourite chocolate, nut or other thing that you prefer.
For around 12 cookies you will need:
60g apple sauce
2 tbsp coconut (soft) or vegetable oil
60g maple or agave syrup
1-4 tbsp water
120g plain flour
pinch of salt
1/2 tsp baking powder
35g cocoa powder
1 handful chopped up vegan, dark, sugar-free chocolate (80%)
1 small handful chopped up almonds
Mix the apple sauce, oil and maple syrup together until everything well combined, add some water if needed. In a separate bowl mix the salt, flour, baking and cocoa powder together. Then fold in the apple sauce mixture. Lastly, add the chopped up nuts and chocolate to the cookie batter. Wet your hands and form small balls out of the dough, place it on a plate and leave the cookie balls to rest in the fridge for at least 30 minutes. Preheat the oven to 180°C. Place the cookie balls on a tray with baking paper and enough distance between each other, flatten the balls slightly. Leave the tray in the oven for 8 minutes, the cookies should still be quite soft in the middle. After cooling down for 20 minutes, they are ready to eat.
